Protein Pancakes
I went running with the kiddo tonight and when I asked if he was hungry, he said he wanted Pancakes.
I gave in and agreed.

Ingredients
2 cups flour
4 tsp baking powder
3 Tbs granulated sugar (or sugar substitute of your choice)
1 tsp salt
2 cups Protein & Nut (almond & cashew blend) milk
4 Tbs oil (I used vegetable)
1 tsp vanilla
2 eggs (farm fresh is best)
*If you want to up your game, use a cookie cutter to cut the pancakes into fun shapes for kids.

Directions
Pour all wet ingredients (oil, vanilla, milk, eggs) into a large bowl and whisk together.
In a separate bowl, mix all dry ingredients (flour, baking powder, sugar, and salt)
Slowly pour in and mix dry ingredients with the wet until most lumps are gone.
Scoop out about 1/3 cup of batter and slowly pour into a small circular shape on griddle/skillet.

Cook on a griddle or large shallow skillet over medium heat.
They will be a light golden color when done.
Serve with syrup (or peanut butter, sprinkles, chocolate, jelly, or nutella)
