Homemade Meatballs
Honestly, I think I love food prep almost as much as I love eating...

Meatballs
Ingredients
1 lb lean ground beef (or turkey)
1 diced onion (yellow or red...I use red strictly for color)
4 oz of fresh, diced mushrooms
4 cloves of minced garlic
1/2 cup Panko bread crumbs (if you get these in italian flavor...fabulous! Plain will do just fine.)
2 tsp chopped parsley
2 tsp thyme (don't use ground thyme)
1/4 cup vegetable oil
4 egg yolks
1 tsp garlic salt
1 tsp black pepper
Food Prep
Prep these balls a day in advance,
so they keep their form when cooking.
Hand mix (with your fingers) all ingredients.
Roll into mini 1" balls.
FYI: They look huge because my container is small.
The Business
Preheat oven to 350F
Remove balls from fridge.
Lightly dust them with flour.
Heat 1 Tbs of olive oil in a large, heavy, oven-safe skillet over medium heat.
Cook meatballs for about 8-10 min, turning frequently, and brown the sides.
Yes, there will be some pink. Don't freak out.
Place entire skillet in the oven, and cook for 15 min.
Turn off the burner (sometimes, I forget).
Remove skillet (using an oven mit!) and return to stove.
I'll leave my mit on the skillet handle
(...because I forget it's hot).
Remove the balls and place them on a plate lined with towels to absorb the grease.
Dump grease out of skillet and return to stove.
In the skillet, pour in your favorite jar of pasta sauce.
Add in at least 2 tbs of Italian seasoning and 1 tbs of sugar to the sauce and simmer over low medium low heat.
Add the balls back to the skillet and bathe them in the sauce.
Plating
Add zoodles or pasta to plate.
Spoon sauce over the noodles.
THEN place balls on top
