Granola Bars

Here's my favorite granola recipe for snacks on the go or breakfast!

INGREDIENTS:

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries
  • 1/3 cup packed brown sugar
  • 2 cups traditional oats
  • 1 cup crispy rice cereal
  • 1/2 teaspoon vanilla

DIRECTIONS:

  1. Preheat oven to 315 degrees.
  2. In a large bowl, stir oats, rice cereal, sunflower seeds, and cranberries together. Set aside. 
  3. In a small pot, melt butter, honey and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes. Pour in vanilla and stir.
  4. Pour over dry ingredients and mix well to moisten all ingredients. 
  5. Pour into a baking sheet with parchment paper on it. 
  6. Press out to be about 3/4 inch in thickness. 
  7. Pack the mixture into one side and keep pressing down, so it's compact.
  8. Bake in oven for 10-15 min.
  9. Cool on a counter top to room temperature for two hours or place in the freezer.
  10. Once cooled, pack bars into Saran wrap or sandwich bags & store in the fridge.
