Granola Bars
Here's my favorite granola recipe for snacks on the go or breakfast!
Yield: 10-12 bars
Prep Time:
Cook Time:
INGREDIENTS:
- 1/4 cup butter
- 1/4 cup honey
- 1/2 cup sunflower seeds
- 1/2 cup dried cranberries
- 1/3 cup packed brown sugar
- 2 cups traditional oats
- 1 cup crispy rice cereal
- 1/2 teaspoon vanilla
DIRECTIONS:
- Preheat oven to 315 degrees.
- In a large bowl, stir oats, rice cereal, sunflower seeds, and cranberries together. Set aside.
- In a small pot, melt butter, honey and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes. Pour in vanilla and stir.
- Pour over dry ingredients and mix well to moisten all ingredients.
- Pour into a baking sheet with parchment paper on it.
- Press out to be about 3/4 inch in thickness.
- Pack the mixture into one side and keep pressing down, so it's compact.
- Bake in oven for 10-15 min.
- Cool on a counter top to room temperature for two hours or place in the freezer.
- Once cooled, pack bars into Saran wrap or sandwich bags & store in the fridge.
